It might seem like with the colder weather, it’s harder to eat healthier without those fresh fruits and veggies from market. But with some tweaking, you can have delicious comfort food that’s just as healthy for you.
Lean proteins and lots of veggies to get enough vitamins and minerals for your body are the key to keeping you healthy for conception. This chicken chili recipe is easy to make in the crock pot and chock full of good-for-you ingredients.
Chicken Crockpot Chili Soup
Two tablespoons unsalted butter
One onion, sliced
One green pepper, sliced
8 boneless chicken thighs
8 slices of bacon, cut into small pieces
1 tablespoon thyme
1 teaspoon salt
1 teaspoon pepper
1 tablespoons minced garlic
1 tablespoon coconut flour
3 tablespoons lemon juice
1 cup of chicken stock
¼ cup unsweetened coconut milk
3 tablespoons tomato paste
Place butter in the crockpot. Fill with thinly sliced onions and then peppers, evenly distributing over the bottom. Cover that layer with the chicken thighs, and then add the bacon on top of the chicken. Add all seasonings, and then the lemon juice, chicken stock, coconut milk, and then tomato paste.
Cook on low for 6 hours, stirring and breaking up the chicken before serving. Add topics such as cheese and sour cream, and viola!
