Eggs for Your Eggs
Part of staying your physical and emotional best for possible conception is eating well. And there are specific things you can eat that will help improve your fertility.
We all hear that eating breakfast every day is the best way to stay healthy, and it’s true. This recipe will give you a nice boost of energy to start your day. Eggs are full of protein, vitamins B12 and E, and sometimes have added DHA. Vitamin B12 helps thicken the endometrium lining for egg fertilization, decreasing the chances of miscarriage. Vitamin E helps protect your eggs’ DNA. And any added DHA helps with carrying to term and the right birth rate. Made with mushrooms, this recipe also helps keep your body going when you are stressed, along with helping to manage your hormone levels.
Mushroom and Herb Omelet
Ingredients:
4 large eggs
1 and ½ cups fresh mushrooms – sliced
1 tablespoon fresh parsley – chopped
1 teaspoon fresh oregano
Basil or thyme – finely chopped
2 teaspoons butter
Salt and pepper to taste
Whisk together eggs and spices, then set aside. In a medium skillet, with the heat on medium, sauté the mushrooms in about 1 teaspoon of butter until they’re tender. Set aside the mushrooms. In the same skillet, melt ½ teaspoon of butter, pour half of the egg mixture into the pan. Cook until almost set, and then spoon half the mushrooms over one side of the omelet. Fold the other half over the mushrooms, then slide it onto a serving plate. Repeat with the rest of the ingredients.
