High in Fertility Nutrients and Low in Fat
For National Nutrition Month, we’ve got a recipe that’s nutritious, full of fertility-enhancing foods, and ingredients to boost your immune system. And better yet, this soup is lower in both fat and salt content than anything you can pick up at the store. Watch those canned soups – the preservatives can really detract from the originally healthy ingredients.
Black Bean soup with Jalapeños and Cilantro
2 tablespoons olive oil
1 onion, chopped
1 carrot, chopped
4 garlic cloves, chopped
2 teaspoons ground cumin
1 to 2 tablespoons chopped jalapeño pepper with seeds, divided
2 15- to 16-ounce cans of black beans, undrained
1 15-ounce can petite diced tomatoes in juice
1 ½ cups low-salt chicken broth
Chopped fresh cilantro
Chopped green onions
Crumbled feta cheese
Heat oil in heavy large pot over medium high heat. Add onion, carrot, and garlic; sauté until vegetables soften, or about six minutes. Mix in cumin and one teaspoon of jalapeño. Add beans, tomatoes with juice, and broth; bring soup to boil, reduce heat to medium, cover, and cook until carrots are tender, about 15 minutes. Transfer 3 cups of soup to blender and puree until smooth. Return puree to the pot. Simmer soup until slightly thickened, about 15 minutes. Season to taste with salt, pepper, and remaining 1 teaspoon jalapeño, if desired.
The black beans are high in antioxidants, which can help you carry a baby to full term, as well as make it easier to conceive. Tomatoes contain properties to help reduce the occurrence of endometriosis, and the garlic is full of vitamins C and B6, which regulate your hormones. As we limbo between Winter and Spring, it’s still a great time to make healthy, satisfying soups!
