The Coziest Stew for You and Baby

When the chill of January descends, we all crave those hearty, warm dinners more than ever before. And the good news for fertility is that you can throw together an easy crock-pot meal or simmer on the stove situation with the right lean proteins and vitamins to keep your fertility strong while still satisfying that winter craving.

 

Rich and Creamy Chicken Stew
 

Ingredients:

  • 4 quarts chicken stock

  • 2 cups cooked brown rice

  • 1 Tbsp. olive oil

  • 1 onion, chopped

  • ¼ cup shallots, finely chopped

  • 3 cloves garlic, minced

  • 3 stalks celery, diced

  • 3 carrots, chopped

  • 8 oz. mushrooms, sliced

  • 1 zucchini, chopped

  • ¼ cup peas

  • 2 cups kale, chopped

  • 3 cups cooked chicken, cut into bite-sized pieces

  • ½ tsp. cayenne pepper

  • 1 tsp. thyme

  • 1 tsp. rosemary

  • 1 tsp. paprika

  • 2 bay leaves

  • ¼ cup chopped parsley

  • Sea salt and black pepper (to taste)

 

After you’ve made the brown rice, cooked the chicken, and chopped your ingredients, grab your blender. Combine the rice and one quart of chicken stock; blend until smooth. In a large pot, heat oil and cook onions, shallots, and garlic until they’re translucent. Add all remaining ingredients except parsley, including the rice and stock blend. Simmer for 45 minutes. Remove bay leaves and stir in the fresh parsley. Season to taste with salt and pepper.
