Soup for the Body and the Soul

Brrrr, it’s cold out there! The perfect time of year to come home to a delicious, hot soup, soothing you after a long day. All the better if it could help you conceive a little one you hope and dream for. Part of being ready to become pregnant is eating healthy, nutritious foods. Chicken is of course a solid choice for lean protein, and the ginger in this recipe increases circulation and helps with digestion, making sure your body is absorbing all the nutrients it can. And even better, shitake mushrooms are the highest food in the antioxidant L-ergothionein, which helps reduce stress in men and protect women from free radicals – which in turn leads to lower birth defects and miscarriages. 


Chicken soup is certainly good for the soul. But it doesn’t have to be boring or taste the same as it always has. This Vietnamese version adds some spice!


Vietnamese Chicken Noodle Soup


Ingredients:


•    1 gallon low-sodium chicken stock
•    3 bone-in, skin-on chicken breasts
•    4 chicken wings
•    5 scallions, cut in half
•    4 cloves garlic
•    2 cinnamon sticks
•    2 whole star anise
•    1-inch piece fresh ginger, peeled and cut into coins
•    ¼ cup dry shiitake mushrooms, rehydrated in warm water for 30 minutes and thinly sliced
•    3 Tablespoons fish sauce
•    3 packages ramen noodles (just the noodles)
•    1 cup fresh bean sprouts
•    1 jalapeño, thinly sliced
•    Fresh mint sprigs
•    Thai basil sprigs
•    Fish sauce
•    Hoisin sauce
•    Sriracha
•    Lime wedges


Directions:


In a large Dutch oven or stock pot, place the chicken stock, chicken breasts, chicken wings, scallions, garlic, cinnamon sticks, star anise, and ginger. Bring to a rolling simmer, and let simmer for about 20 minutes. Once the chicken breasts are cooked, remove them, set them aside, and shred them when they’ve cooled. Continue to simmer the rest of the ingredients for another 30 minutes. Then strain the broth through a colander to remove the solids and spices. Next, add in the mushrooms, fish sauce, and noodles to the strained stock. Simmer until the noodles are al dente, or for about 5 minutes. Scoop some noodles into bowls, top with some shredded chicken. Ladle lots of broth into each bowl. Garnish with the bean sprouts, jalapeños, and fresh mint, and serve with fish sauce, hoisin sauce, Sriracha, and lime wedges.
