Pineapple Deliciousness for Endometriosis

If you suffer from endometriosis, one of the best things you can do is eat anti-inflammatory foods to help keep the pain at bay. It’s best to avoid alcohol and soy, and dish up as many fruits and veggies as you can.

Some foods that can help you include green, leafy vegetables, celery, broccoli, blueberries, salmon, pineapple, walnuts, and ginger. To give you a good start in the right direction, as well as a great healthy option no matter what health issues you’re facing, try this recipe for sweet and sour meatballs!

Sweet and Sour Meatballs


  • 1 20-ounce can of pineapple chunks

  • 3 Tablespoons rice vinegar

  • 2 Tablespoons ketchup

  • 2 Tablespoons reduced-sodium soy sauce

  • 1 Tablespoon brown sugar

  • 2 teaspoons cornstarch

  • ¼ teaspoon crushed red pepper

  • 1 large egg

  • 1 medium carrot, shredded

  • ¼ finely chopped scallion whites

  • 2 tablespoons minced fresh ginger

  • 1 ½ teaspoons Chinese five-spice powder

  • ¾ teaspoon salt

  • 8 ounces ground turkey breast

  • 8 ounces ground pork

  • 2 teaspoons canola oil

  • 1 large bell pepper, cut into 1-inch pieces

  • ½ cup sliced scallion greens


Drain the pineapple juice and set it aside. In the same bowl, whisk in vinegar, ketchup, soy sauce, brown sugar, cornstarch, and crushed red pepper. Now, finely chop enough of the pineapple chunks to make about ½ cup. Press out excess moisture with paper towels. Keep the rest of the pineapple, too. Next, lightly beat the egg in a large bowl, stir in the carrot, scallion whites, ginger, five-spice powder, salt, and the finely chopped pineapple. Add the turkey and pork, then gently mix together with your hands or a wooden spoon until just combined – don’t overmix it. Using about 1 Tablespoon each, form into small meatballs – should be about three dozen. Place on a baking sheet lined with foil and coated with cooking spray, and bake at 450 degrees for about 15 minutes.

While the meatballs are baking, heat the oil in a large skillet over medium heat. Add the bell pepper slices and cook for about one minute. Whisk the juice mixture again, then add to the pan. Bring the whole thing to a boil and then cook while stirring continuously for one minute. Stir in the remaining pineapple, and then mix in the cooked meatballs to coat them.

To serve, thread one meatball with a piece of pineapple and/or pepper onto a small skewer or toothpick. Drizzle with sauce and sprinkle with scallion greens.

This delicious recipe can be used for appetizers, as a side dish, or as the main dish for a meal. And the rich sauce gives everything such a great flavor. The anti-inflammatory effect is certainly useful, too!
