A Baby Making Breakfast

If you’re trying to conceive a little one, eating healthy is one of the best things you can do to prepare your body. And certain foods come with even more oomph for what you need. Specifically, during ovulation, you want to up your intake of leafy greens, eggs, whole grains, meat, and fish. These have plenty of B vitamins to help release the egg and complete implantation. Try out this hearty egg-based breakfast dish for a warm and filling start to the day.

 

Greens and Fontina Baked Eggs Recipe

 

Ingredients:

 

  • ¾ cup fresh spinach

  • 1 cup fontina cheese, freshly grated

  • 8 large eggs

  • ½ teaspoon salt

  • ½ teaspoon freshly ground black pepper

  • 2 Tablespoons half and half

  • 2 Tablespoons unsalted better

  • 1 clove garlic, minced

  • 1/3 cup panko bread crumbs

  • 1 Tablespoon fresh basil, chopped

  • 1 Tablespoon fresh cilantro, chopped

  • 1 Tablespoon fresh parsley, chopped

  • 1 small loaf ciabatta bread, sliced and toasted

 

Directions:

 

Preheat your oven to 400 degrees Fahrenheit, and prep your 9 x 13-inch baking dish with nonstick cooking spray.

 

Take the fresh spinach and layer it evenly on the bottom of the baking dish. Add half of the fontina cheese and then place the eggs at random on top. No worries if the eggs shift around or go through the spinach. Sprinkle with salt and pepper, then drizzle half-and-half over the top. Cover the mixture evenly with the remaining cheese.

 

Place the baking dish in the oven and bake for 20 to 25 minutes, checking on the eggs in the last five minutes to see if they are cooked to how you like them. If you want the yolks to be cooked through, the dish will need another five to ten minutes.

 

While the eggs are in the oven, add butter to a small saucepan over medium heat. Whisk the butter without stopping until it bubbles, and when any brown bits appear on the bottom of the pan, immediately remove from heat, still whisking for about 30 more seconds. Let it stand for one minute, and then add the garlic and stir for one more minute. Stir in the bread crumbs, tossing well to coat everything together.

 

After the egg mixture is done baking, remove the dish from the oven and coat the top with the bread crumbs and fresh herbs. Serve with toasted bread.
