Calcium and Vitamin C to Avoid Preeclampsia

Fresh foods are here again from local growers! For this month’s recipe, we bring you a summer pasta chock full of colors, vitamins, and nutrients. It’s also paired with plenty of vitamin C and calcium, both nutrients that have been shown to help reduce the risk of preeclampsia. If you’ve faced preeclampsia while carrying a child, recipes like this can help! With some middle eastern flavoring and some garlic, your taste buds will thank you. The ingredients are also healthy and not too heavy for an evening meal.

Creamy Garlic Pasta with Shrimp and Vegetables


  • 6 ounces whole-wheat spaghetti

  • 12 ounces peeled and deveined raw shrimp, cut into one-inch pieces

  • 1 bunch asparagus, trimmed and thinly sliced

  • 1 large red bell pepper, thinly sliced

  • 1 cup fresh or frozen peas

  • 3 cloves garlic, chopped

  • 1 ¼ teaspoons kosher salt

  • 1 ½ cups nonfat or low-fat plain yogurt

  • ¼ cup chopped flat-leaf parsley

  • 3 Tablespoons lemon juice

  • 1 Tablespoon extra-virgin olive oil

  • ½ teaspoon freshly ground pepper

  • ¼ cup toasted pine nuts (optional)


Fill a large pot with water and bring to a boil. Add spaghetti and cook for two minutes less than the package directs. Add your shrimp, asparagus, bell pepper, and peas, and cook until the pasta is tender and the shrimp are cooked through, about three minutes more. Drain the mixture.

Mash garlic and salt in a large bowl until they form a paste. Whisk into the paste the yogurt, parsley, lemon juice, oil, and pepper. Add your pasta mixture to the bowl and toss everything together until it’s coated with the flavor. Serve sprinkled with the pine nuts, if you wish.

This dish packs 28 grams of lean protein, 75 milligrams of Vitamin C, and 292 milligrams of calcium, not to mention plenty of potassium, Vitamin B, folate, and iron – all good things for preparing your body for a baby!
