What do broccoli salad & sperm have in common?
It’s summer – or, should we say, barbecue season! There isn’t much better than a potluck this time of year. Now, you can certainly bring burgers and brats, or lemonade, but if you want to take advantage of good food and some fertility-boosting power, you can bring a staple that’s also good for you.
Broccoli salad is chock full of broccoli, of course, and the vegetable has major amounts of Vitamin C. The vitamin increases male fertility by dramatically increasing sperm count – by as much as 125 percent.
Better for You Broccoli Salad
1 head broccoli, florets, chopped
1 cup halved cherry tomatoes
½ cup sliced celery
½ cup sliced red onion
½ cup frozen, thawed edamame
¼ cup raisins
¼ cup toasted sunflower seeds
½ cup cooked, crumbled turkey bacon
Honey yogurt dressing ingredients:
1 teaspoon salt
½ teaspoon garlic powder
1 Tablespoon olive oil
¼ cup honey
2 Tablespoons apple cider vinegar
½ cup plain Greek nonfat yogurt
Pepper to taste
Boil a pot of water, adding a pinch of salt. Blanch broccoli florets by adding them to the water for two or three minutes. Drain the broccoli and rinse under cold water. In a large serving bowl, add broccoli and all remaining ingredients. In a separate small bowl, whisk the dressing ingredients together. Toss the dressing with the veggies and top with crumbled bacon. Keep this dish refrigerated until you’re ready to serve it. Recipe makes about 6 ½ cups.
A healthy, tasty summer dish that’s a snap to make! And good for your swimmers. That’s our kind of recipe.
